I can attest first-hand that forming the Kingdom of Israel as a Jew (from a Jewish start) is one of the more difficult scenarios in CK II. If I am ever able to do it (Very Hard, Ironman) I'll let you know.
Edit: It is fairly easy as a Christian, though. Just win the Crusade.
The Jewish starts are Khazaria 1066, and Axum/Semien 769/867. All others require conversion.
There aren't really a whole lot of ways to do it and have a good chance of survival. The way I did it was through swearing fealty to Abyssinia and conquering titles while under their banner and later forming a faction to take over the Kingdom. After that it was a matter of waiting for a good opportunity to start chipping away the Abbasids and maintain realm stability. It's a serious exercise in patience and luck, to say the least--because if the united muslims decide to start gunning for you, there isn't much defense for it---and starting as the Zunbils isn't much different in many respects.
