If you let your heir being educated by someone of a different culture, he might adopt that culture.
If you own the Rajas of India DLC, you can simply convert to the culture or religion of your capital - at the cost of 500 prestige or something like that.
Be careful that changing culture might also change your cultural retinues, not sure if Byzantium Cataphracts are still as OP as before.
Otherwise, choose the culture the most predominent in your vassals, so they don't hate you
Just remember that havinga different culture from that of your subjects will leave you with a small revolt risk and make them see you as a foreigner...
I never played greek or italian culture or restored the Roman Empire.
I read that Cataphracts aren't as good anymore (don't even know how good they were) but italian retinues should be one of the most useful (pikemen).
You will lose all your culture specific buildings upon culture change.
If you're advanced in tech, the opinion hit for being of another culture should be quite low.
Greek was the language of scholars in Rome. Also, the elite in East Rome was of Greek-Latin decend. I would advice going Orthodox and keeping Byzantinum as capital when reforming as Greek.
Italian is the culture of nowadays Rome. The Italians always saw themself as the direct decendants of the Romans and seeked for a big part of their history to rebuild their own empire. You should be Catholic and make Rome the capital when reforming as Italian.
The Germans where the Emperors of the Holy Roman Empire, the catholic successor state of Rome. They always saw themself as Romans, so rebuilding the empire would have been possible. I would advise to stay Catholic and taking Rome as capital when you reform Rome as German. Alternatively you could just let them stay Franks.
Some not so obvious, but still possible candidates for the Roman Empire where the Russian, French and Norse/Norman.
The Russians saw themself as the decendants of the East Romans and tried multiple times to reclame Byzantinum and anounce themself the new Roman Empire, once Greece fell to the Turkish. They would have kept Byzantinum as their capital and would have stayed Orthodox.
The French, being decendents of the Franks, like the Germans, would have a claim on a new Roman Empire. They would be Catholic and have Rome as capital.
The Vikings played a big role in the East Roman Empire, both economically and military. They more than one waged war against East Rome. So having them, or their decendents the Normans taking over Rome would be an awesome, but possible, turn of events. They would have become Orthodox and taking Byzantinum as capital when Norse, or would have become Catholic and take Rome or eventually Neaple when Norman.
