You don't need to have Eustache alive apparently, as I had it this way :
Eustache died around 1080, got named Saint, and his son Godefroy ruled on Boulogne only.
The Crusade was launched iin 1112, and when chosing to join the Crusade, you are asked to chose a beneficiary (ie. to whom the gained territories, should the Crusade be successful, shall go) : you cannot chose yourself, nor your first heir.
So I chose my second child, a girl, as beneficiary.
Gained the Crusade and was the main participant, so my daughter got the whole Jerusalem Kingdom.
Then you wait for a very little while and you have a pop up, chose "I wish I was him/her".
You play as Eustache's Grand Daughter, Queen of Jerusalem !
>Completed.
So, now I have to wait for the next Jerusalem crusade in a hundred years or so? I guess I can become some kind of emporer until then.
... again ...

I just realized my beneficiary bastard of a brother received a duke title in jerusalem after all and I made the switch. Anyone know if I can still get the achievement this way, even if it takes another generation to make it to king?
