The last option is probably your best bet since it's usually difficult to marry someone who has the religious type you want since nobles don't usually marry outside of their religious groups unless their already part of your court and it would require you to find a jewish wife which would require one of your jewish courtiers to have enough children to reach maturity to than marry yours.
that should list your ways to change the religion of your character and if it needs a DLC
Besides those you can take the longterm way of having your children educated by a guardian of the desired religion (and take heritage/faith focus if you have conclave).
but as far as I can remember, you can just secretly convert to anything as long as you're not Zealous and your wife or concubine was different religion than you (if with DLC I guess)
ohh, and you need 250 piety for secretly converting to any religion
..and it woud result in a game over without DLC.

Well none of those two does that. Again, the point was not the conversion itself, the point is to prevent a game over afterwards. Nomads are the only exception regarding religious DCL requirements, as you said, but Horse Lords is still required.
I just thought they were, because I really don't remember much about the vanilla with no DLC, and the title along with the explanation of the question itself isn't about game over but about how to convert in the first place, so yeah... I didn't think about the Game Over
