Whether or not you'll win depends on how you do during the event chain and how many 'points' you can get.
First off, you should pick Black. That'll give you a small headstart score-wise.
If you play it safe and roll a good move that'll net you a point.
Neutral rolls yield neither of you anything.
Fumbling it up will lead to Death taking a point away from you.
If you're willing to risk it, you can get two points through a great move.
One point for a good move.
And you can loose two points by making a terrible move here.
That aside, it seems that several traits can be used to help you
Game Master or Genius guarantees a great move and gives two points.
Deceitful, Master Schemer, Shrewd, Strategist and Quick all guarantee a good move - one point.
There are some more opportunities to either intimidate, outdrink or seduce Death from here on that'll also net you some more points
All in all, you need to get at least five points by the time the event chain is done to survive.
I did this quest chain with death and won and only have seen it that one time. I thought it was something to do with me being immortal.
