Other possibilities for councillors abruptly leaving are death or becoming incapable (can be common when your realm is suffering a particularly nasty epidemic) or they leave your court for some reason like inheriting a title that is a vassal to one of your vassals. However, in those cases the council position should remain empty until you appoint someone new and not be automatically filled.
I owe no favors, my members are typically my vassals, and I can find my old members as they were before being elected, they are healthy as one can be expected to be in CK2.
They just seem to swap without warning or reason I can determine

I have ran a couple other games before this with these mods and i have never had this problem
