DLC from Conclave to Holy Fury: worth getting?
I haven't bought anything since Horse Lords and I've been wanting to play this game again recently. But I won't play unless I have every DLC because I will feel like I'm missing something. I am basically Paradox's perfect customer. Are they worth it?

Yes. But only if you really like this game. It doesn't transform the game into something else. It enhances what was already there. Jade Dragon is the weakest of the bunch and you may skip it if you want to play in western europe (it gives you nothing there).

Jade Dragon offers great new CBs for minor realms, though. And reaching China's diplomatic range isn't that difficult either. You just need to get a county on the silk road. So if you get Alexandria, Jerusalem or Antioch in a Crusade then you get to interact with China.

From the rest of them: Conclave and Reapers Due are a must for me. Monks and Mystics is the one that I forget to play with the most but it's great for RP and getting artifatcs. And Holy Fury is certainly great, especially if you like Pagans.

I'm up to 360 hours in Crusader Kings 2;

Roughly 280-300 of which are from the game itself, and the rest is from Elder Kings Mod (Elder Scrolls, Total Conversion Mod).

I'd say the DLC is worth it, b/c there's a lot of entertaining things to do (especially with all the mods out there).

Yeah the dlc is worth it especially when on sale. I have like over 400 hours most of that is the base game + dlc. Maybe like under 50 is mods.

I own all the expansions and a few cosmetic dlc.

-Conclave is a must have, it's an huge improvement over the vanilla ruling and laws system.
-Reapers Due is also fantastic, it overhauls disease and injury as well as adding the prosperity mechanic.
-Monks & Mystics is alright, some societies are fun, new council actions are good and the new relics are great.
-Jade Dragon is also pretty alright, new CB's, interacting with China gives you something good and fun when playing in the east.
-Holy Fury is amazing, shattered and random world game modes, better pagan reformation, saints and coronations, bloodlines, new crusades and warrior lodges are all great additions.

tl:dr Conclave, Reapers Due and Holy Fury are all well worth it, Monks & Mystics and Jade Dragon are less worth it but still worth it.
