Here, I'll help with step 2: https://ck2.paradoxwikis.com/Downloadable_content
Legacy of Rome (adds retinues, so you have a standing army)
Charlemagne (new start date)
The Old Gods (new start date + Vikings/pagans playable)
Reaper’s Due (add new illnesses so they are no longer generic + the plague)
These were one of the first dlcs that I’ve bought.
I own every expansion dlc and select cosmetic dlc.
I prefer the following packs:
1. Holy Fury - The ability to selectively reform pagan religions + Old Gods makes this my fave
2. Old God - I love playing as the Vikings of Norway, if you love indiscriminate raiding and border expansions, try this one
3. Legacy of Rome - As Panicsferd stated, this adds retinues which can change your gameplay quite a bit
Apart from those recommendations, I also really enjoy "Conclave" and all the interactions with the Council that come with it. And the education system in "Conclave".
But I think all of the QoL (quality of life) expansions are worth getting like: Way of Life, Legacy of Rome, Conclave, Reaper’s Due, Jade Dragon (for new CBs). Then the others that either change the date and or give you access to different cultures/religions/factions should be bought if you want to play as those.
