There are 3 types of DLC, the ones that unlock stuff, the ones that add or overhaul mechaincs and the ones that do a combination of the two.

From the ones that unlock stuff you can easily eliminate the ones that don't interest you. For instance, if you don't intend on playing as a Muslim character or a republic you can skip Sword of Islam and The Republic.

From the 2nd category, only Way of Life is considered essential by everyone but most of them are pretty good.

The 3rd category is tricky as you might like something to be unlocked/added but not all the things that the DLC adds. But you should definitely consider the two that unlock the new start dates (Charlemagne and The Old Gods).

Here's a list from the wiki with more details:

Like Al said, much of the DLC involves unlocking various parts of the map and government types/religions. If you want to play those things then those DLC will be valuable, if all you want to play is christian feudal rulers most of it will be pretty useless for you. One somewhat important DLC not yet specifically mentioned is Legacy of Rome; it adds retinues (basically standing armies) which make a lot of things in the game significantly easier especially if you rush the tech that unlocks larger ones rather than taking a more balanced research approach.

If you are willing to look around on third party sites, you might still be able to find the Five Year Anniversary edition, which is the base game, the three dlcs commonly considered the most important dlcs, and a couple other dlcs that are decent, at a steeply discounted price.

If you are willing to splurge a bit, Paradox's own site has the Royal Edition, which is the base game and every expansion to date (So everything but the cosmetic stuff) for $68 right now, though I imagine that's outside of what you are willing to pay for base game + 3 dlcs.

Otherwise I'd recommend Way of Life and Holy Fury. Holy Fury is a bit more expensive than other expansions for this game, but is jam packed with content. Let's you play as tribals like Old Gods, so most of the map is playable between Feudal Europe and the tribal regions, adds more content and diversity to tribals, adds some more features and flavor to Catholics, and then adds a shattered/randomized world mode with tons of options.
