There are 2 ways to go Hellenic. Either a decision once you reform the Roman Empire or by scolarship focus and "delve into classics."

take the "learn about gods" option and you become hellenic.
Its a good idea to do it when you already control all 5 holy places (the 5 counties are named in the decision, you need to control one of them for the decision), and have enough piety so that you can reform it directly because that allows you to ask vassals to convert to your religion.
But Athens is a byzantine county so yea you can start as count or strategos of athens in most starts.
Ofc turning hellenic as a vassal of the byzantine emperor is pretty likely to get you into game over, since the orthodox byzantine emperor is not really likely to tolerate a pagan vassal forever.
The trick is to do it when you have all 5 religious sites, then reform hellenism into an organized religion and bribe ppl to get their opinion high enough so they convert when you ask them. Make the most powerfull vassals hellenic and make sure that the commanders and the marshall who elect the emperor are hellenic.
If you just become hellenic and don't make sure that the voters aren't turned hellenic too ofc they wont elect your heir.
The Byzantine succession law and the nonsensical inability to change it (seriously Paradox? I can have a reformed African pagan kingdom in London with four sister-wives, but changing the Byzantine succession law is too much) could cause issues though, if the electors don't convert. I personally just got the Imperial Elective Away mod to hit that one on the head.
Is very difficult to survive though. I got lucky, the emperor tried to start some ♥♥♥♥ with me but there was a massive faction and they all became my allies, making the war an even 50/50 in terms of troops. Definitely winnable.
Spent the rest of that game as the openly hellenic kingdom of Greece; but then the game version changed and I had to abandon that save file in order to get those sweet wonders I wanted so badly.
It can be gotten rid of if you destroy and recreate the title.
Maybe your liege asking you to adopt gavelkind would work aswell.
There also used to be a method where if you ask pope for coronation or lifting excommunication or something like that, he could ask you to adopt gavelkind. But i think this method was removed.
Also i am not sure on thos one, but someobe sponsoring mass conversion in your realm coukd also ask for you to adopt different succession law.
