Countess married to Byzantine Duke. How do I avoid their heir taking my county to the Byzantine Empire?
I'm the King of Asturias. I married a random courtier (my kinswoman) matrilinearly to a random Byzantine prince who was not supposed to inherit anything. People died along the way and now she is a Countess in my realm and the is a double-Duke and Count of foreign lands. They have an heir, of my blood and surname, who one day will inherit all of that. How do I avoid that he leaves me to become a Byzantine lord like his father, taking his mother's county (MY county...) to the Byzantine emperero? Do I have to make him a Duke of my realm? How exactly do these mechanics work?

make him a duke or his mom a duke and make sure she dies before her husband

A titled vassal of yours will only cease to be your vassal if they inherit a higher title in another realm. So if he's set to inherit a county in another realm you just need to make him a count in your realm first. Your controlled realm inheritance law won't affect this - the other realm's law could though (stop him from getting the foreign county). If he's in your realm at the moment you shouldn't have a problem since you can then grant him a county title.

If he is from your bloodline, he should stay under you. I am almost positive of that. Like mentioned before though, you could have high crown law which would prevent outside inheritance, or give the mother/kid a higher or an equal tittle. You could also be the guardian of the kid, then easily have him have an accident (Since he is in your court and a kid, it would be very easy).
If he does leave your kingdom though, you should be able to press your claim and get them back.

Being a dynasty member only affects someone staying a vassal if you are pushing a claim. And the only time you get a claim for a vassal leaving the realm if after an indipendence war.
