how to turn into Russian culture
I have started a game with the county of Theodosia under the protection of the Byzantine Empire in 769 and I have invaded the duchy of Moscow, but the territories will be converted to the Greek culture, since my character is Greek and Russian culture does not yet exist, so how do I become Russian?

find a russian cultured person invite too your court and get him to tutor your heir or become the court tutor that should at least get the ball rolling if you wish to become a ruskie.

great, but the problem is that Russian culture does not exist yet, and even if he existed, he probably would not be a Christian, so he could not invite him

According to the wiki Ilmerian Severian and Volhynian merge into Russian if the ruler of a province is either: a reformed pagan, neither of east slavic nor Fiinno-Ungric culture, or already Russian. So, if you are an orthodox greek and don't convert those provinces to greek (not having high stewardship would help) they will eventually develop russian culture. Then you can do as Phatboi suggested, or you can move your capital to the province tha has juste developed Russian culture and culture convert your character. With rajas of india dlc, there is a decision to do so, a random conversion event may fire if you don't own that dlc.

the problem is that every territory that I invade becomes Greek in less than 10 years ... the Greek culture is spreading too fast in my provinces

You could have someone who is Ilmerian, Severian, or Volhynian educate your heir in Heritage and hope they flip to the educator's culture

If one has a good opinion of you then you can buy a favor from them, and use that favor to force them to come to court with you.

This is why you tone down culture spread in the Game Rules before starting a game.

First, convert to a non-Greek culture, in order to halt untimely conversions of conquered provinces to Greek culture before the Russian "melting pot" event happens.
When inviting courtiers to employ as tutors, prefer those who are Diligent and/or Gregarious, and NOT Slothful or Shy.
Also, avoid East Slavic and Finno-Ugric cultures (they'll prevent the event if you aren't a reformed pagan), as well as cultures from bordering provinces (as they would spread instead).

Keep in mind that events like this fire on a per-character basis, so having as many characters as possible, owning as few Counties as possible, will slightly increase its chances to happen.

After Russian culture is created, you have a few options to adopt it yourself:
  • wait for Russian Mayors and Bishop to be generated, and use them as tutors;
  • use the "convert to capital's culture" decision if you have Rajas of India;
  • wait for the "ruler assimilated by local culture" event if you don't have Rajas of India;
  • convert to Ilmenian, Severian, or Volhynian, then use the "adopt Russian culture" self-targeted decision.

Regardless of the option you choose, you might have to wait for a very long time, as both events have a mean time to happen of 100 years, with no way to speed them up (besides game rules).

When you say that I should convert my character into another culture that is not Greek, do you mean any culture?

you tell me that I must become lmenian, Severian or Volhynian, but the problem is that all the characters in this culture are pagan, how do I attract them? If I understood correctly, you say that I should wait for those provinces with these cultures to have vassals as temples and mayors to invade them, but these tribes acquire feudalism very slowly, and some never adopt feudalism.

Why Greek culture is expanding so fast? I have played with other cultures like Basques, Franks and Picts, but they never expand as fast as the Greeks
