Unique benefits to Holy Roman Empire?
So, the year is 1200 and I currently own a majority share of Europe.
Founded the Eire Empire, have a Tanistry Succession, there's no other single power that could possibly rival mine (except maybe Tibet, on the other side of the planet), the Pope is my vassal, gender equality became a thing 800 years early, I've unlocked Viceroyalties and have so many kingdoms under my belt that most of those Viceroyalties are practically honorary titles for how much power they actually grant in comparison to mine.

I could make the Holy Roman Empire whenever I want, but I'm wondering if there's a point when I already have everything under the singular control of the Eire Empire.
Does the HRE offer any special benefits that is worth giving up the feeling of pride from having created an empire in my own name?

stick with your current empire. The reason for this is that the HRE forces you to use the princely elective, which compared to tanestry does allow your vassals to steal the empire.

But it is also much easier to put one's own canidate on the throne.

Afaik only unique benefit to the HRR is that you get the Reichskrone as an artifact, really not worth the changes when you already have a big empire.

Just read on tanestry real quick on the wiki and I see what you mean. The candidate must be of your dynasty (if I am correct), but the ai favors older tanists. Whereas princely elective has the possibility of a vassal stealing the empire, nominating an ensuring your children get the crown is easier when compared to the imperial elective (-1/-2 with princely and -1000 with imperial).

Not at the 769 starting point.

You need Italy + another kingdom in central Europe, you are Catholic, and no opponents with emperor titles in central Europe. Plus a minimum size, prestige and so on.

The Reichskrone artifact, the princely elective succession form which gives +20 vassal limit, and I believe all held kingdoms instantly become de jure lands of the Holy Roman Empire. :)

If you dislike princely elective you can switch to a regular succession form if you have absolutism (no powers for the council at all) and maximum centralization, though then you'd lose the +20 vassal limit bonus.

You can also get the Reichskrone by forming Francia. I don't like forming HRE as Empire of Italia because it forces you to give up Rome and other lands to the Pope.

I think you may be confusing it with something else. As far as I know, it is only gained either by Charlemagne at his coronation or when forming the HRE through decision. After searching through the game files (where it is named "crown_hre" if you want to look) I can find no other way to gain it.

I got the crown by forming Franica as Charlemagne. i didn't even marry the Lombardy princess to get the claim. The year is 881 in the game and Lombardy is still ruled by House Alachisling'

This is only for Charlemagne, though. Others will only get it from forming the HRE.
