Some would also say the Vanilla base game is great on its own and all the dlc's have made it a little bit messy along the 5 years it been going so starting with just the Vanilla and no dlc would be the best choice.
Base game without the DLC's is great, as are most of the DLC's. Hurry up and buy it, get ready for a learning curve, but be prepared, you will love this one.
Combined with the FU business practices, I think not.

I think you've forgot the part where the game and all dlc go on sale practically every month, and how there's been constant updates and development on the game over the whole five year period. Only MMOs and some, few AAA games get as much development.
With vanilla only you are basically playing the same/very similar game with each playthrough (christian feudal you only decide whether to start count/duke/king/emperor), I think you can play vanilla byzantine too.
You will be getting weeks of gameplay within "standard" European setting alone. Once you get bored with "typical knights", get some of the earlier DLCs, enhancing Byzantines, Norse or whatever you like, then patch the game to the state it was in before the next major DLC.
Repeat.
Before you run out of things to play with, any DLCs that increase depth of the game will get a major sale or two. Buy, patch and so on. Optionally: laugh at people who cry about CK2 being an expensive game, while yourself paying small percentage of the nominal price, like any sane person can.
Or, in other words, try something that resembles a journey a person playing this game from its release had. Luckily, you can still get it through older versions that are available via Steam. The only downside is you will have to sift through a lot of inaccurate info when looking for anything due to mismatched versions and, obvioously, the hassle with downgrades. Small price, though.
TL:DR
Of course it's worth it. Base game didn't gather all of this acclaim for nothing. People claiming otherwise either forgot about the initial fun it provided or have somewhat inflated expectations.
I also separately bought the merchant republic dlc, should I get used to the main game before trying the hansa or something? I've heard they play differently.
Do you not have to worry about english invasion?
England is usually busy butting heads with france or Denmark over a bunch of shared claims left over from the norman invasion period, or tearing itself apart through familial backstabbing...or trying to beat up Scotland or Wales. And usually eventually gets involved with crusading when those happen.
Generally as long as you don't go out of your way to antagonize anyone, they generally leave ireland alone.
And if England does start looking like they're eying you're stuff, try marrying some spare kids into the royal family for a non-aggression pact. Or if all else fails, swear fealty and rip them apart from the inside.
There's a bunch of different ways you can go just in that one area.

Unless you do some major ♥♥♥♥ ups regarding vassal control, even as 1st timer by the end date you should have control over at least like half an Europe when starting in Ireland.
