1. Close the game.
2. Steam -> Library -> Hitman: Absolution (right click) -> Properties -> Language -> English.

I found it is actually harder than that in my case. Apparently Steam downloaded me the Japanese retail... with no option to change to English which is really gay.
I have exactly the same problem. I am in Japan, but my account and operating system are English. How hard is it to put in a bloody language select in the options? I am requesting a refund.
Yeah apparently you would need to buy it in an English country... same stuff happens with Google and websites here. I try to access an American website and it goes to .JP version... really annoying.
Yeah, you would have thought by now it would be a solved problem. Pretty ridiculous
