As far as I can tell, oysters, along with corn, tomatoes, and some other things aren't in the game yet. I might be wrong, but the in game wiki says corn isn't in yet and tomatoes and oysters don't even have entries.

Corn and tomatoes can be grown on Cow Island. Haven't seen oysters yet.

No worries, I had to accidentally stumble on the answer myself lol. I kinda get why each island can only plant their unique crop, but it's a tad annoying to not know off a tooltip or something.

For anyone else in the future who needs it:

Cow island = Corn/tomatoes
Bird island = Coffee beans/chocolate
Moon island = Cotton
Fish island = shrimp/squid

Also carrots for bird island. In addition, if you build your deck out close enough to bird island and research long reach, you can move the plots for coffee, cocoa, and carrots back to your base. Helps the automation of coffee and cocoa tremendously.

Hell I may as well try to hijack this thread while it's active. Does anyone know what tutorial #7 is? I did 1-6 and 8 but never saw a 7.

Hey, sorry oysters are actually an item not yet added to the game. There were planned for a future content (along with the seafood platter recipe) where you can harvest oysters underwater but it's not in the game yet! So sorry about the confusion
