Oddly enough, petrification does not interfere with raising the shield at all, and blocking the pecks of this overgrown chicken is surprisingly easy.

There are tons of places you can cheese them.
In that stable room there are 2 - jump on crumbled wall and whack it, or get it stuck between chest and torch pole and whack it.

The one that is near the boss room you can cheese on the wheel barrows and the one in the barn you can crouch jump onto a low bit of the wall to the next module and cheese from there tons of other spots too

It's really just the petrify that's ♥♥♥♥♥♥♥♥ imo, if it happens at a bad time and someone runs up on you then you literally can't do anything which just seems like bad design imo
