what's the reason for doing quests?
Sorry for the basic question but is there anything else I get after completing quests besides rewards and XP? I completed all the quests for 4 or 5 merchants, I checked if there is anything new to buy from them but nothing changed. I expected new items will show up to buy. maybe I'm missing something but can someone one know what it fully does!? thanks in advance.

So these current quests will unlock a few things. Such as more service options, and crafting options.

When they open up the weapon/armor NPC quests, doing them will increase the quality of stuff they provide, as well as increasing the quality of stuff the Squire will offer you for free.

Basically, as the quests progressively open up and you complete them, you will be able to buy and craft blue, purple and orange gear.
The reason the quests are time-gated is to prevent sweats to run in gold kits in the first week.

that makes sense! I had a good time learning stuff thank god I didn't face sweats this early. but they are appearing now after gear rarity change.
