Should shield protect your back if you don't hold it?

no , and after a couple hits it should either break of stagger the player to use it.

Be badass if you could use your shield to parry enemy attacks, heavier weapons have a longer parry downtime, and barbs could break the shields if they just kept pounding on it. Or they could keep it as is im down for that. But having a shield on your back does kind of feel like it should block blows behind you especially since only a couple classes would leverage it, would deter some rouges too XD

Yes as long as you incur the movement penalty for "using" it.

It would make ZERO sense for the shield NOT to protect you if its on your back. But the exposed areas should be vulnerable to attack.

This mechanic makes sense in theory, but it wouldn't work in practice.

I mean, imagine a Fighter with a Pavise shield equipped on his back. You'd basically become unkillable from behind, since nothing is getting through that.

Heavier weapons can break through shield blocks. If you actually tried blocking a Barb's two-handed starter axe with a Cleric's Buckler, you're 100% getting stunned for it.

That's decent I guess. Still being able to block an infinite number of rapier, one handed sword, arrows etc is pretty lame.

Fact doing combat against a 2 handed user is tough work as a shield user.

I imagine a shield on the back, whilst still occupying your 2nd weapon slot would be balanced as it only protects situationally.
