What you might be interested in looking for is the "Lantern" item. i think that can be wielded in a hand alongside a weapon, so might be more your style.

I sit 15' away from a 65" plasma tv, and running it at 1280x720. Even the text is small. Starting every game in a pitch black area wasn't helping. I finally figured out how to hold the lit torch though. It's odd to put the torch in a place where it cannot initially be used, forcing the player to move it to the correct spot and then hit the correct key.
I don't play many games any more, I'm old.
The place it starts in within the inventory doesn't seem to allow its use - I tried every key on the keyboard. Moving it next to a potion and hitting the 3 key worked.
I highly recommend turning on HDR if you can, it helps bunches. If not, crank up your brightness. Otherwise, the game IS very dark (hence the name). As others have said, in your stash screen on the left and ride sides of the "paper doll" are your consumable slots. You start with a torch (if you threw it, talk to the squire). Press either 3 or 4 to cycle those slots and the torch comes out lit.
