What to do with the gold I earned? What's it for?

I've put all of it in the stash but most of the items in the shop aren't good and you can't bring along anything better than common if I understood correctly.

Save it up for potions and stuff for normals or save it for gear or save your gear for if/when you decide you want to buy the game and try Hard mode or High Roller as its called.

Do you get better items when you do the merchants' quests or do they sell with more variety?

squires provide more choices but apparently leather merchant and tailor quests got removed

also gold purses hold 50 gold and costs 5. That'll clear your stash alot.

don't know about other classes but when playing as fighter you can always buy pretty good armor

Ranger so mostly leather, woodsman and alchemist.
