Is there a way to do an aircraft carrier landing in this simulator?

Sure you can. Select a New Flight from the menu, then on the Location panel click 'Customize' and click 'Special Starts' in the bottom left corner. Now you can choose Carrier Approach (or alternatively a Carrier Start). You can also just take off from any airport near the sea and fly to the carrier from there (check the in-game map to see where the carrier is).

BoSDriverr has a nice carrier landing video (the carrier has gotten more details added to it since he made it).
