On the Excavator size issue the 2000 version that i think is comparable to the Komatsu PC2000 should have a bucket size of 15.7-17.9 yards or 12-13.7 m3 and be suitable to load 70-200 US Ton Trucks. On the 4000 version that i think is comparable to the Komatsu PC4000 the bucket should be 28.8 cubic yards or 22 cubic meters and should be suitable to load 150-250 US ton Trucks. Even i think the 500 is to small of bucket size its comparable to the Cat 6015B and the bucket size should be 8.1 cubic meters or 10.6 cubic yards suitable to load 60-120 US Ton Trucks.
In game i will only recommend build loading ramp, that will be lower/higher than working zone, and use hoppers to load dump truck, sad side is fact there is no any storage that can pullout its cargo by demand, and bacause of that will be better to sort ore and dirt in different places. Yes that will cost alot money and resources (or free if mine and refine all resources) but give at least some tasks...
