Not full of crap. I made sure to only have gear appropriate for my level as well as used all 8 characters to make the game more difficult. You need to employ strategy to succeed. Some bosses also have enrage timers where if you haven't won by then it becomes nearly impossible as they get too many turns as you have encountered.
You should be timing your enemy breaks with your maximum BP boosts. Also swap around which travelers you have and their subjobs to suit the situation.
I don't know what game you were playing.
I imagine must of us understand the mechanics of the game from playing the first one. There's a LOT you can do without having "insane gear" and just keeping up with what the game fuzzily expects you to have.
Use your boost points wisely. Make use of buffs and debuffs. Have the right passives. Pay attention to turn order, and learn to manipulate it with Defend, Leghold Trap, Windy Refrain etc. Break at the optimal times. Etc etc etc.
Not to mention it's not just 'insane equips' but the right equips. HP equips on the lowest characters. PAtk or EAtk ones on your damage dealers. Elemental boosting weapons. Healing accessories. Speed boosting on a Thief. Etc etc etc.
It's not easy at first, but eventually yes it's absolutely not hard to just overpower most of what the game throws at you by knowing how to get around its limitation.
