How do I change/delete old save files

I'm sorry for flooding the form, but with the new update I was just wondering how I can create new save files and/or delete my old ones so I can play the new version. I have used all 3 of my files and don't know how to delete them or convert them.

Again, sorry if this has been asked before but I'm confused.
