Maybe it wouldn't be able to "eat" it, but could hurt him nonetheless, considering their size and high strenght.
Gameplay mechanics aside, I'd imagine lone dogs would simply stray away from giants, if possible.
If Giants were to target dogs and baboon hawks, they'd have potentially too many distractions keeping players safe, so that can explain why they don't interact with other creatures.
Something in my battle idea I should point out, the first intelligence bit should probably be more battle intelligence because I couldn't find an estimate for a wolf/lion's IQ level.
To reiterate on the fact that the forest keeper is plant matter, I think it says in the bestiary they are made of plant matter, relying on photosynthesis to survive. They are also related to brackens which is quite cool. As RaindropperG said, the forest keeper could seriously injure the eyeless dog but I do think the eyeless dog has the considerable power advantage over the forest keeper.
