Are they? I've been in the ship before with the giant nearby and I found that every time I start whoopin and hollerin at it that it charges at the ship, you can literally see it clip through the wall in attack mode, also the horn attracts it, so I'm pretty sure it can hear.
I am 99% sure, my experience with them is that despite all the screaming with the people I play it'll just for some reason never aggro. But that is true the horn does attract it so it's still questionable.

No, they're not deaf, they hear quite well, and they see even better. (Their huge eyes give them excellent vision.) In fact, they are the only monster in the game that has no real weakness. They are also always in hunt mode, so the players don't necessarily even have to do anything to aggro the Forest Giant aside from just being seen.
However, there are areas they cannot fit in or through, so yeah, there's ways to potentially outsmart them.
As for the OP's request... I disagree and say don't nerf them. The game is meant to be difficult and repeated success isn't as much the point of the game as just having fun trying.
You talk about the forest giant like its a real life animal, dog. But I've never been able to aggro them via just sound so idk.
I did not turn it off, but my point still stands, they idle around the ship and then charge it when somebody talks, I tested it intentionally with a few friends.
