I am also not very good aiming with controller as I am mouse-player mostly, but played it completely on my PS4 controller neithertheless.
What did helped me a lot for bow aiming (while going for weakspots) during a fierce fight was to use the legit slow-mo function you can access while being midair (it is the same mechanism like used in Horizon Zero Dawn).
To avoid to manually press the additional button for it, go to accessibility options and turn on auto-slow-mo with bow. Makes things much more convenient. Just double jump, hold aim with bow, and you have much more time for aiming carefully than usual. Is also a good tactic to buy you some thinking time if things go crazy.
