Gardens can be a decent investment in the early game as long as it's only one or two. Later on when you have plenty of Planks and Bricks you will want to sell the gardens and replace them with farms.
It's so easy to sustain on berries and soil until your villagers are capable of upgrading your Soil to Farms rather then Garden. Just skip the Garden unless you're actually struggling.
I was constantly selling it while having over 200 coins left over.
Soil isnt hard to get at all.
Minor hint, you commonly get more gold by selling what you get right away.
I was gaining coin by simply buying the first pack and selling all that it offered.
Soil alone is worth 3 coins, which is a free pack.
I made over 40 coins out of 6 in the early game just by doing this.
