For the Sapphire Wine quest, I told Parvati to not go on a date without knowing I'd need to do the quest. Is there some way I could try to revert this, whether it be going back to the area, or through console commands?

I dont know, but continued interaction about her and Junlee if it arises again should be encouraged

Check your autosaves to see if you can go back in time a bit or make a habit of manually saving periodically.
