Too much level gating?
Does anyone else feel the exploration level gating is badly done?

There is only a specific viable order you can do the areas/bosses even in the open world (if you are not superhuman), otherwise you deal 0 damage and die in 1 hit. I feel like the power differences in levels should be extremely smaller, so you do less damage to a world boss for example but not zero, if you meet it earlier than you are "supposed to". Elden ring did it better

I managed the Yellow Harvest area as soon as it became available, which had much harder enemies than the next story zone. Until a certain point, nearly every side boss can be defeated upon first running into them (especially if they are inside of a story zone.)
But later on, Chapter 2 and further, many Chromatic enemies and such get to the point that you pretty much have to come back to them if you don't spend 2 hours parrying them flawlessly.

Let me tell you this. There is NO open world. Minimap is not the same that open world. So you can't go anywhere you want. You have to go from A to B with little deviations here and there.

Even in areas where chromatic enemies appear you HAVE to come later to do them, its just all so pointless, why have open world structure then

It feels like you do something wrong.
Do you have your weapons at currently the max possible level? Do you use good lumina combination?
You usually should be able to kill most optional bosses available to you at any point. Not all but most.

only one I couldn't beat in the "open" word setting so far and had to come later was sprong, but I'm only playing on normal, expert is just a waste of time but doable without too many deaths

has it been a while since you played Elden Ring? run to Caelid once you hit the first steps and see how much damage you put on that rot breath dragon.
You can beat chromatic abbest level 1 if you wish, so what's the problem? The game gives you the freedom to fight against allthe enemies you encounter. If you don't want to learn them to be able to beat them just come back later.

no. It's done fine. I miss games that have hard level caps and limits. IMO, level scaling is what takes the fun out of exploration. No sense of danger entering a place you shouldn't be when you're allowed to be everywhere.
I've beaten everything I've encountered immediately other than Chromatic Abbest, Golgra, Sprong, and the bosses of the Frozen Hearts area, so no, there's not really walls on content for the most part. With a good pictos setup, you can hit 120k damage a turn with Lune very shortly into act 2, so the damage is there to beat this content.

It sounds like you got the optional quest for the merchant in the Ice Caves in Act 1, then ignored the multiple NPCs telling you the zone was tough and to turn back for now. The scaling in this game is exquisite imo, you can totally opt out of parrying, and for the most part dodging, with Lumina and/or weapon effects. If you don't have the stats/gear for an area, you can still complete it with skill (parry counterattacks are almost like a stat equalizer with how strong they are)

No you cant and there is no freedom. I just beat dualiste at first try, and then there is a chromstic enemy who i cant even damage and kills me in 1 shot
