and on easiest difficulty, if your dying to enemies, your not levelling your Defence and health and is completely a skill issue.
Learn to read please, I said the middle setting. And I started playing because it seems like a good RPG and hoped the QTE nonsense wouldnt have such a huge impact.

Im on elite bruh, and things still dont 1 hit me unless they are designed to.

This is about the early game where the first boss and optional fights just wreck anyone who isnt perfect with dodging
The optional fights are obviously not possible at the time that they first show up without dodging (without completely ridiculous amounts of grinding anyway), but there's no particular reason that you need to do them immediately - you can just ignore them and then backtrack to them later on, they never go away. The first optional boss becomes a lot easier once you have a 3rd party member for instance (even if it one shots your characters still at that point, with the 3rd character you can just resurrect characters each turn they get KOed and burst it down before you run out of resurrects as it only ever uses single target attacks).
The first boss (I did have to do a decent amount of grinding, I think it probably wouldn't have been necessary on a lower difficulty though):

And the first boss of act 2 a bit later on (later in the game there are a lot more options available, I don't think I was overleveled this time - I don't think I made any particular effort to grind since the 2nd boss, although I did spend a lot of time backtracking through areas that might not have happened in a normal playthrough):

Nothing is stopping you from leveling up and assigning stats if you can't parry or dodge.
I dont think it should be. I'm playing on the highest difficulty and missing a dodge or parry or two only matters on the hardest enemies. (which are optional)
Also, regular dodge is very forgiving. Its not hard to dodge attacks.
Also remember of healing spells. The most basic one heals 50%. Healing items refill at bonfire.
