do we ever get a clear picture of who 621 is?

i won't lie, i don't look at every little scroll you come across....there were things i missed lore wise that i didn't get till the 2nd or 3rd time through. Im kinda of an impatient player. And this game royally pissed me off on a few occasions....so im like crushing my mouse in my hand inbetween levels, in no mood for some of that dialogue.

Believe 621 was brought out of stasis in a bag when purchased by Walter in one of the trailers. Litterally a modified war slave to be bought and sold essentially.

The people who think it's just a sack of organs seem to forget the lead up to the escape mission is basically 621 limping their way to the Jailbreak unit Walter left iirc.

Given the trailer and various dialogue in the game, its kinda safe to assume 621 is a rather misshaped genetic human that probably has only real functions while inside/part of his AC. Honestly, if it wasn't for the Jailbreak sequence and him somehow getting himself into that AC, I'd suspect he can only function as part of an AC.

I'm actually more curious how Ayre was capable of communicating with him during that process; So as much as I like her, she's quite literally a parasite since its not just being part of the machine that communicates with him, but she's directly part of whatever his body is (although that sequence also shows a lot of technology and stuff? so he's also got a good amount of cybernetics if nothing else).

Think Arye lives in the coral upgrades in 621's brain so yes you are right there. Might also be tied to Gen 4 as well as Iguassu can also hear Arye.

The only canon things about 621 are that they are an armored core pilot with generation 4 augmentation and a mercenary who works as a Hound for the handler Walter.

A few things are hinted or implied, but they apply less to 621 specifically and more to the line of mercenaries supplied by the unnamed broker/doctor Walter talks to in the story trailer: that being that they are kept in cryo-stasis between contracts and trafficked like property.

We can further imply from bits of in-game discussion that 621 may theoretically be able to save up enough COAM to reverse their surgery and "go back to normal". This also tends to negate the "chili bag" and "brain in a jar" style theories about them, unless one assumes the doctor keeps the intact human body we see in the trailers on deep freeze for when they return.

Aside from this, everything beyond it is pure speculation. 621's identity is obscured intentionally as it is in every AC title so they can be whoever you want them to be beyond whatever is directly told to you (ex: the only detail in Master of Arena that is canon to the game is that the player's Raven is on a revenge quest after their family was killed, and in AC4 the canon is that you're a NEXT who works for Anatolia after being rescued from a nearly fatal incident).

that's a good point about the jailbreak sequence. It would have been nice of fromsoft to give some kind of visual context to said jailbreak. Im sure pater or whoever it was that captured 621.....wouldn't have put 621 in even a junk mech. And we hear walter saying i left an ac for you. So that absolutely implies 621 escaped from a facility and made his way down to the sewers to get in that old mech. And didn't Carla or people affiliated with her say over the radio we got his old mech? So 621 was for sure removed from the original AC, that we so painstakingly painted and kitted out...that really pissed me off at first, im like don't tell me i gotta get a new mech and not just rekit it but re paint it as well.

Going off of precedent from previous games' H+ subjects, 621 is 99% original meat save for the augmentations in his head (referred to in-game as a "cerebral coral control device), which presumably also partially paralyzed him. Iguazu has the same augs but is established by various lore bits and the STV sketch to be fully mobile so your "brain-fried" status is probably due to surgical complications.

Nope, kept vague with no really identity. So 621 can by anyone that plays the game.
