I beat him around level 20 on hard with Rakshasa (for his magatsuhi), nozuchi to tank, a healing demon, and some luck...

Nozuchi has been such a MVP that I have been feeding him HP/Vit/Str incense and am very hesitant to replace him. I even skipped Oni in favor of keeping my jacked Nozuchi

Honestly, there are actual MVP demons that can be really good with the right setup/strategies. One of the things you learn by playing around with demon fusion for a bit and really digging into the compendium.
On my first playthrough on hard difficulty, about level 25.

I knew to bring Sukunda and Sukukaja, because I had already beaten Matador in Nocturne, so Red Capote did nothing against my team.
However I still struggled on earlier levels because of Matador's Andalucia damage output, especially in combination with Omagatoki: Critical.
I didn't know about Phys Dampeners at the time, since they weren't a thing in Nocturne.
I cheesed the entire game on hard difficulty by making the Nahobino the tank and investing all points into vitality, and it all started when I got Nozuchi's essence with taunt.

Vitality is the most busted stat in the game. If you can't die, you can't lose. I don't see much point in making the Nahobino a pure damage dealer when offensive stat gains soft cap at (level + 10), and there exists plenty of super strong damage unique abilities for some demons.

To answer the question, though: I beat Matador immediately after beating Hydra. I was level 17, hard difficulty.
