Beating Shiva gives you the option to fight a WAY stronger lucifer at the end of the game, beating demi-fiend gives you his OP essense but nothing story related at all. So while Shiva for example in CoC is required to reach the true neutral ending in CoC in CoV all those optional endgame-superbosses, are purely optional, but they will reward you with nice stuff of course, like beeing able to summon shiva, or Demis essense.
Because DF gives an essence that blocks everything lmao.
in CoV you have to walk to modern tokyo in the 4th (final) act. after you have met him in Daat (near the entrance to the hindu lair.) where you can talk to a researcher who will give you information about yakumo, how he was at a child and also that a similar looking man was found in the school. When you move to school you will meet yakumo and have a nice talk, where he then says that he will protect tokyo from the shrine. When you then enter the shrine you have another talk with yakumo, where you then as a reward gain the ability to summon both "human" nuwa, aswell as snake Nuwa.
Demi-Fiend on the other hand has a lot of obscure rules going on in the background that are quite difficult to guess even if you're willing to dedicate some time testing the waters. While he's certainly manageable on a first Hard run without any cheese or shenanigans, the RNG of his ultimate move might push you to wait for a 2nd playthrough!
