Type %appdata% in your explorer address bar
You'll be in ...\Roaming
Go to ...\Roaming\SEGA\SMT5V\Steam\[a bunch of numbers]
It will have your saves listed as GameSave01.sav etc.
Delete whatever
edit: My bad, I reread your OP. I assumed you were using Steam. I have no idea where it is for the Microsoft Store. Maybe the general location up to SEGA, but there will be a Microsoft folder instead of Steam?
So I tried that and it didnt work for me. Deleted, opened the game and save files are still there. Re-opened %appdata% and the .sav files that I deleted was restored. Weird.
If you left cloud save on then Steam will auto download it from the cloud when you delete it manually. There are a few different ways to delete a file and upload it to the cloud system.
Try turning on the game, alt-tabbing and manually deleting the save file, then exiting the game and wait for the cloud to sync. It should now be deleted.
