Are Agility, Vitality and Luck just pointless stats?
Agility and Luck seem too RNG based to use viably and since I am playing Hard Mode where your basically getting one shot most of the time, Vitality feels like it does nothing as well

I feel like dumping entirely in Physical or Magic is the way to go since the faster you kill someone, the less attacks you take overall from them

luck affects everything with a % chance to happen, whether it's inflicting status ailments, dodging, etc. agility overlaps some of the same spots, but is important for initiation, you will still run into enemies that go first and crit and 1 shot your team if you don't h ave enough agi. you don't need to dump all into one stat, i did 100 vit, 100 mag by added stats then spread the rest around to luck/agi and the battles were fine on hard. if you don't add to vit you're going to get massacred. even if you do something like give nahobino null/void all resistances... you can still be killed by piercing attacks used by many endgame bosses.

I am very interested in what exactly they do, Agility seems to affect hit rate, and vitality lowers damage recieved but I really wonder by how much?

It's usually the case. So if you don't want to use your MC as a tank it's better to put offensive. But as been said above other stats are also matter. Vit and Agi doesn't do much in the beginning, but later in game you'll see that you miss a lot (with low agi) or just getting one-shotted (with low vit). So you'll need balance between it. I would say go with STR/MAG as your main stat and raise other stats accordingly. I would say LUCK=VIT>AGI. But if you don't care about getting aliments and getting good drops/items(luck probably could affect drop rates and navigator findings) then you could leave luck on AGI level.
But just in case it's all individual. It depends on your playstyle and how you want to build your MC.

I've put a little into agility as it helps with turn order and accuracy/evasion. It sucks whenever you miss an attack or the enemy gets the first turn. Worst case scenario: Game Over.

Vitality is definitely helpful, I've put quite a bit into it and my character feels very tanky, taking several hits from bosses before going down. Meanwhile demons with low vitality occasionally gets one-shotted. Combine with skills such as Rooted Soul (+30 HP/MP) and Inflaming Divinity (All stats up twice) and it will be even better. Both are Nahobino exlusive skills. Don't forget that if the MC dies it is game over and you don't have to heal after every little injury if you have high HP and Vitality.

Currently my stats are:
STR: 64
VIT: 40
MAG: 26 (Base)
AGI: 33
LCK: 27 (Base)

Haven't really experimented with luck. I assume it affects critical hit chance which is important for physical builds but I read a post where someone went full luck build (71 luck at level 42) and he estimated he only got at least 1 critical hit 70% of the time with Aramasa (8 weak hits). That feels like what I'm currently getting with my build, though I've noticed my crit chance skyrockets when fighting low level demons and vice versa for high level ones. So I don't know, either luck doesn't affect critical chance or it only a small buff. Using skills like Bloody Glee (crit chance up) feels like a better choice rather than pumping luck.

You get enough vit,agi and luck from leveling up. Those are just enough for all content on hard mode. What is more important is covering your weakness with essences or passives.
Going Full Str or Magic better. Str has upper edge, cause it works everywhere with impale or critical gem.

The best offense is defensive stats ;D

agi and luck also affects your crit rate.

low luck and agi vs opponent who has a lot (or at least a lot more than the demon who wants to crit), you will never crit, no matter how many boosters you use in your skill slots.

Luck also affects Negotiation results. You can see it more prominently when they ask something and you can cut it short when you tell them they had enough.

I like keeping my Agility and Vitality at least half of my main offense stat. DPS is zero when dead or missing.

I think Luck impacts ailment success rates? That's how it has worked in pretty much every other game directed by Komori.

luck affects A LOT... and it's included in the accuracy/evasion formula as well.
