Yes, if grip turning didn't give you Burst NOS, drifters would have a massive unfair advantage.
Removing B2D, setting the steering to twitchy, and picking a car and setting good "grip" handling gets you over the line.
I am now braking, and holding a line through a corner and boosting out like the old NFS days. I was like you, scanning all the gameplay to watch someone take a corner properly.
Coming from a black box fan, you can have fun in this game. Its not quite black box, but a middle ground between black box and ghost. Enough to enjoy the game easily.

Are you sure about that? There was an information that they’ve made handling more “realistic” cuz of new frostbite engine. Also they was able to double the simulation.
Trying to say that its now even worse than it appeared to be in Heat.

The ghost games had this thing where you would corner like a tank. I should have said steering sensitivity, but it does make the car twitchy as well.
So no steering deadzone
I gotta say it is quite fristrating at times (although i haven't tried with traction control ON). But it's git gud kinda frustration. It's very much possible to keep the car in check when it breaks out, just takes a lot of practice. Haven't won a single race in the first 3 hours i've played but now i manage. Alo maybe from the upgrades that improved the car. It's ok for me personally as it adds to the immersion of starting off as an amateur with a rustbucket. Still, to answer your question: It is VERY similar to Heat's handling model.
