If you find that SFM does not offer youthe ability to render an mp4, then render it as an avi and download a program call Handbrake (Google it). Use it to convert your avi to an mp4.
First off, you need to find the material files related to the hat you want to paint. In this example, I'll be painting the Engineer's Texas Ten Gallon. This one's VMT is in SourceFilmmaker/game/tf/materials/models/player/items/engineer/cowboy_hat.vmt.
You'll want to keep a backup of the original VMT. There's two ways of doing that. Either copy and paste it right there, and name one cowboy_hat.vmt.bak or something like that. You'll then have to edit the one whose name you didn't change. Or, my preferred method, you can make an override, by copying the file and pasting it in SourceFilmmaker/game/usermod/materials/models/player/items/engineer/ (you'll most likely have to create these folders). This is the one you'll want to edit.
Now, open the file in notepad. The line you need to edit to get the paint colour is this one: "$colortint_base" "{XXX XXX XXX}". These are RGB values. If you want to use an offical TF2 paint colour, here's how you can get it done:
Go to the official Wiki's page for paint: http://wiki.teamfortress.com/wiki/Paint
Once you've chosen one, you need to get its colour hexadecimal value, and have it converted to RGB. Let's say here I want to use Radigan Conagher Brown, with a hex value of #694D3A. There's a bunch of handy converters on the net, like this one: http://www.javascripter.net/faq/hextorgb.htm
Running #694D3A through it returns an RGB of 105 77 58. I therefore have to change the value in the VMT to "$colortint_base" "{105 77 58}", and save the file.
And there ya have it, The cowboy hat should appear brown in SFM. When you're done with your poster/video, just revert things as they were, by either restoring your backup file, or deleting the override, depending on the method you chose to follow.
I thought there was a way to do this right in the element viewer

you have to grab his Hat Proxy.dmx file in order for it to work
