Green Screen Color Change
I want to create (or at least TRY to create) and animation with the green screen, but how do I change the color?

Use the green screen model from the workshop. It has skingroups of different colors.

How do you use greenscreen in SFM really? I guess you could put a video or an image in it's place, but I'm not sure how to do that.

You render the video and use video editing software like Sony Vegas or After Effect to replace the green screen with image/video. As for image background, you can replace the texture of any panel model (scale it up if necessary) with the image you wanted via override materials (go look for guides).
