What I did was use a program called Source 2 Viewer [valveresourceformat.github.io]. When you open it, you should see something like this:

Find the workshop map you would like to use in S2FM either by clicking on the CS2 drop down and scrolling to the bottom or manually finding it by opening a file.

Once you find it, double click on it and it will open another tab in Source 2 Viewer. This will show you what is inside of the vpk file of that workshop map.

When you open the workshop tools, create a new add-on (you can use an existing folder for this as well, this is just for tutorial purposes). This will create a folder inside of this directory:
...Steam\steamapps\common\Counter-Strike Global Offensive\game\csgo_addons.
Go to Source 2 Viewer and right-click the .vpk file of the workshop map. Click "Decompile and export":

It will pop up another menu that allows you to choose what to export and in what format. I would leave everything default and click continue.
Choose the export destination to be the folder of the add-on you would like to import the map into (C:\Program Files (x86)\Steam\steamapps\common\Counter-Strike Global Offensive\game\csgo_addons\[YOUR_ADDON]). Make sure to also export the vpk file of the map as is to the same add-on folder:

open up S2FM with your add-on and set the session map to the workshop map:

and voila

I used Hinnerk's Dust port for my example.
this guide here is similar and was useful for me:
