What's an FK rig?
I've been reading things about animating in SFM and quite a few people mention FK rigs. What are those and how can I use them?

FK rigs are the rigs you see once the model is spawned, but before attaching an IK rig.

You mean IK rig. It's not something you need to animate, but it makes certain movements and posing easier. That's really all it is. It would have been better if it didn't lag your SFM.

FK rigs are usually known as the armature in other animation programs such as blender.

FK = Forward Kinematics
IK = Inverse Kinematics

A question relating to those: How do I have BOTH active simultaneously? I want to animate a Promethean Knight but the IK for it doesn't cater for it's hands or wings, nor it's faceplates and jaw.

Is there some button beyond me which has 'show both' or something? If so, where would I find that?
Furthermore, I now see why people prefer IK rigs to FK in some cases:
It emulates how posing in GMOD is done (usually because ragdolls).
And FK is reminiscent to the Joint Tool.

Yeah, I have some custom models like that, quite a few actually, but to answer your question:
No. I've learned to animate between both, loading and unloading the IK rig as needed.
It's a little more "drawn out" doing it this way, but the results appear to look a lot better.

It may help you to know that usually a custom models spawns with the FK rig by default.
You then have to go in and re-rig it with an IK rig.

At least that's been my experience... :steamhappy:

Actually, if you click the gear in the top right corner of the Animation set editor, and check "Show hidden controls", you can see the FK controls while using an IK rig!
