For example, if you have -/SourceFilmmaker/game/[folder]/materials/models/sonic/customeye.vtf, you should use "models/sonic/customeye" as the texture, not just "customeye".
If you mean the original iris texture, an override material contains the path to the material (relative to -/SourceFilmmaker/game/[folder]/materials/), allowing you to somewhat easily find the VMT material file, which you can then open in a text editor to find out the file-path and -name of the iris texture (again relative to -/SourceFilmmaker/game/[folder]/materials/), allowing you to find the original iris texture that you can then try to edit and make a recoloured version of.
