Any model can mean anything from fnaf to MLP to tf2 hats to any games that has been ported over to sfm.

Right-click a model's animationset, choose "Add Override Materials", right-click it again, choose "Show in Element Viewer" > "Model", expand "materials" at the bottom, then the material(s) you want to change the colour of.

From here, you can right-click the material(s), choose "Add Attribute" > "Vector3" (or "Color"), and name it $Color or $Color2. Then you can adjust the three values to adjust the tinting, with 0 being 0% and 1 being 100%, with the first value meaning red, the second green, and the third blue (or you can click on the colour blob if you add a "Color" attribute, and then change its colour in a GUI, but then you're limited to 100% intensity).

Alternatively, you can choose "Add Attribute" > "String", name it $BaseTexture, and set it to a path to a texture that you may have edited yourself. See this guide for more information:

How about TF2 Characters? Can you change their shirt colors to something other than red and/or blue?

There's a collection of workshop items that modifies the default character materials to be paintable:
