Duh… you really need to explore sfm more if you wanna be able to fully utilize it
To have it look better/smoother, right-click the viewport, choose "Render Settings", set the amount of depth of field and motion blur samples you want, then go to the Clip Editor, have the scene (non-"work") camera selected, and stay still in time as the scene will be sampled.
The way it looks now is how it'll look when exported (provided you export with the same amount of depth of field/motion blur samples).
you can change the gobo texture to something else if you want a visible outer cone or something like jurassic park (just came to mind). you can also reduce noise and change all of those volumetric settings in the light parameters until it looks like you want it to look like.
