Riposte: correct again. you dont have to attack exactly immediately, you have like....a quarter second or a half second maybe to do it before the window ends. Try waiting to the last possible second every other riposte and see how it absolutely will mess with your opponents timing.
Both: they will parry incoming strikes while your attack is in progress, thats how people handle the many 1vsX situations you will find yourself in, incorporate drags and accels into your ripostes and counters to hit the next level on your way to the games skill ceiling.
Counters: It temporarily (a split second) stops your opponent from moving. Meaning if you play against an opponent who depends on footwork to get an advantage over you....well when you counter he will loose it temporarily.
Counters also prevent you from being stopped when you block an enemy hit. Useful when fighting spears that poke and try to keep you away.
