Report a translation problem
When you have multiple profiles/saves then it will prompt you to select one before getting to the main menu.
The only time it will REALLY matter is if you are trying to do the "beat the game on ultimate difficulty" achievement, at which point you won't want to change it.
Edit addition: I hope I don't come across as rude. You can also get different save slots at the main menu by selecting a different profile at the main menu.
I never tried making a second save during my playthrough, so I don't know if manually saving in a new save slot from the pause menu would replicate your solution. However, once beating the game, you are presented with all of the save slots and can make a new save, make an NG+ copy whenever, as well as having Ultimate difficulty unlocked.
