Some good ones for new watchers and no knowledge of other series needed:
Gundam 00
Iron Blooded Orphans
Gundam Thunderbolt
If you don't want to do that, go with an alternate universe show, I recommend Gundam 00 for first-timers.
The first battle as an introduction to that series is one of the most beautifully executed cinematic scenes I've seen in anime ever.
08th MS Team is a good, short series that can serve as an introduction of sorts to the UC timeline if you want to run down that rabbit hole. Gundam Unicorn can also be a starting point, just be aware you're actually starting near the end of the timeline and will be going back if you follow up with other UC shows.
Gundam 00 is a fun watch, with an excellent first half. I found the second half to drop the ball, though. It's still fun, but it becomes more of a standard shonen anime.
If you want to get in on something new and experience it with everyone, The Witch From Mercury just started recently. The prologue episode is phenomenal and sets up a pretty interesting story with some beautiful animation.
Watch some early UC stuff like the OG and Zeta, ZZ is bad but itt leads into Char's Counterattack which is good. 08 MS team is great. War in the pocket is also good. I'm honestly not a fan of all the newtype stuff so I lean towards early UC series, but people like Unicorn.
On a side note almost everything UC flows forth FROM the original and the concepts introduced in it. everything else gets better from seeing the original 79 series, A lot of the OVA's from that era are really good hand drawn animation as well. People recommending spin offs? go bonk yourself on the head for being a normie.
If you want to learn about all gundams very quickly. Just watch gundam build divers or tri fighters.
IBO's second season was just so bad. I don't know how people can recommend it without mentioning that the second season is a mess of empty plot lines, enforced stupidity and a complete rewrite of how things went during season 1 (i.e the media is under the villian's thumb... except that didn't work in season 1 so why does it work now?).
