Go for the one you want. HG, MG, regular, SD. Which ever catches your fancy.
I did a HG for Sandrock EW Custom back when I was like fourteen. Had zero experience with models before that.
Like the other guy said, get one of a mech you like, that will make the experience infinitely more enjoyable. Don't worry about what grade the kit is.
If you're having trouble finding some. Obviously online would be one place to go but assuming you live in the US, you can try checking a lot of random places. Walmart/Target can randomly have them (I bought an army of Char's Zaku for $15 a piece). Barnes & Nobles or really any book store can randomly have them. If you know places that have model trains, cars, ships, planes, tanks, etc. they may carry Japanese kits for stuff like Gundam, Kamen Rider and other mecha or anime shows.

There are 3 kits out, RX-78, Strike Gundam, and V Gundam.

The later models like the Nu are actually pretty well articulate for the grade they're in.
They don't require nippers or any tools so its very cheap to just get right into it.
I would also suggest the HG Leo or other really easy kits(though this requires a bit of research) not a lot of parts and for inexperienced it may take maybe 2-3 hours to finish.
HGs and other kits that aren't Entry Grade do require tools like nippers and sand paper, but this depends on how far you want to go with your first kit.
High Grade requires at minimum snippers, model kits themselves are about 20-25 bucks, you can also get a basic tools kit for that on amazon for about 10 bucks. usually have the
decent entry snips plus some files and exacto knives.
Cost of entry to the hobby is really cheap but if you actually get engrossed in it you'll find yourself buying niche item after niche item.
Also be aware that you will absolutely make mistakes as you're building your first kits. A little extra stress here or a bend there, it's nothing to worry about that's why the lower grades are cheaper and great for practice.

or offer lower quality model kits so avoid that if you can. Model shops sometimes have them, but these days they're also flooded with warhammer stuff and not much else. (at least in my areas)
You'll want to get some basic modelling supplies too. As as a starter, a clipper for removing the components will suffice, but you might want to look into getting a small file as well to clean up anything you can't clip off. You usually do not require any glue.
Then just find yourself a mobile suit you like and there will most definetely be a model of it. If you're not too sure of your skills, a HG model should be easy enough. No matter what kit you have, they all come with a handy manual on how to put em together, older ones tend to have more text that's only in japanese, but some of the newer ones come with english translations too. If you want to pose it about without worrying about it falling over, it's worthwhile to grab an action stand too!
Set aside some time, watch some gundam on the side and have fun sticking em together! If you fancy yourself a harder one, try checking out Real Grade! They're the same size as HG models so they'll fit in with any you have, but offer a lot more technicalities within. Other grades tend to be bigger (unless ofc you're choosing a giant gunpla from the getgo like the Big Zam or Psycho Gundam, they tend to be bigger anyway)
