It's that once the guard has been defeated enough times you gain more time than lose... and eventually you can ohko them so you don't lose health either

How do you fight the guard? I don't even have the option to fight him. This is the one to the north of the Caporal yes?

By walking on their field and useing swords? Like ... every other charakter in game?

oh, you have to win the game once for guards to become fightable... IIRC
